Strawberry Earthquake Cake

1 cup Fresh Florida Strawberries
1 1/4 Cup XXX sugar
1 box white or yellow cake mix
1 cup shredded coconut
8 oz. cream cheese

Mix cake according to package instructions. Grease and flour 9x13-inch cake pan. Layer approx. 1 cup or more of coconut on bottom of pan. Pour 1/2 of the mixed cake batter over the coconut. Cream together the cream cheese, XXX sugar, and 1 cup mashed fresh strawberries. Drop cream cheese mixture in large dollops over cake mix. Pour remaining half of cake mix over top.
Bake at 350° for 28-30 minutes. Do not overbake. Sweetened fresh strawberries can be poured over top as desired.

Strawberry Salad

1 pint Florida strawberries, sliced lengthwise
3 tablespoons hazelnut oil
3/4 cup chestnuts, peeled and thinly sliced
1 tablespoon raspberry vinegar
Salt & pepper freshly ground
3 or 4 shallots, minced
2 small navel oranges, peeled, sliced crosswise and cut in half
1 quart small spinach leaves, stemmed and torn
1 quart garden lettuce, cut in narrow strips

Blanch the water chestnuts for 2 minutes in boiling water and immediately refresh in cold water. Combine with greens and shallots. Add oil and toss. Add vinegar, salt and pepper. Add fruit and gently toss again.

Strawberry Nut Bread  

10 ounces sliced frozen strawberries & juice
1 teaspoon baking soda
3 eggs, slighly beaten
1 1/4 cup chopped walnuts
1/2 teaspoon cinnamon
1 teaspoon salt
3 1/4 cups selfrising flour
1 3/4 cups sugar
1 cup plus 2 tablespoon oil 

Mix flour, sugar, cinnamon, salt and baking soda in a large bowl.
Add eggs, oil and sliced strawberries with juice and blend well. Fold in walnuts. Do not use a mixer.  Pour into 2 greased and floured loaf pans.
Bake at 350° for 50-60 minutes.

Iced Strawberry Tea

1 pint fresh Florida Strawberries
1/4 cup lemon juice
4 cups cold tea
Ice cubes
1/3 cup sugar

Set aside several Florida strawberries for garnish.
Puree remaining strawberries in a blender; strain into a pitcher.
Stir in tea, sugar and lemon juice until sugar dissolves. Chill.
Serve over ice; garnish with Florida Strawberries.
